This was a little bit of an experiment in the kitchen. I didn't follow a recipe, or have much direction, but the end result was not only edible, but yummy! If you have a few extra peaches lying around, and want a quick and easy dessert, I suggest you give this a try!
here's what you'll need...
for the filling
2-3 peaches, pitted and chopped into sizable pieces
juice of 1/2 lemon
1 tablespoon sugar
1 tablespoon brown sugar
1 1/2 tablespoons flour
pinch of salt
for the topping
1/2 cup flour
1/4 cup old fashioned oats
1/4 cup nuts (I used a mix of pecans and almonds)
1/4 cup sugar
1/4 stick butter, chopped into small pieces
1-2 tablespoons water
here's what to do...
preheat the oven to 350 degrees. mix all of the filling ingredients in a bowl and set aside. in a food processor, mix all of the topping ingredients except for the water and pulse until combined. slowly add water, a few drops at a time until the mixture is crumbly and a bit moist. place filling in a small baking dish and spoon the topping over the peaches. bake for 20-25 minutes until the topping is firm to the touch and the filling is bubbling.
