Saturday night I had Carly and Julia over for a little girls night. I had worked all day so I didn't have much time to pull something extensive together, but I did want to put out something for my guest! The solution - crostini served three ways. The ingredient list is short, the assembly quick and easy, and the results are impressive {or so I was told my these gals!}... 
Here's what you'll need... {for 6 of each type}
1 small loaf french bread... I used the small loaves from Trader Joe's
1 small loaf dark bread ... I used a seeded whole wheat from whole foods
10 strawberries, sliced
1 small brie round ... about 5oz, cut into small strips
2 tablespoons chopped fresh basil
2 peaches, sliced into thin strips
2 oz goat cheese, crumbled
1 tablespoon honey
2 vine ripe tomatoes, sliced into thin rounds
1 small container sun-dried tomatoes
6 mozzarella balls in water, cut into 3 slices
1 tsp italian seasoning
1 tablespoon balsamic vinegar
2 tablespoons olive oil

Here's what to do...
cut bread into slices about 1 inch thick and place on sheet tray. bake at 350 degrees for 5-8 minutes, until bread is firm on the outside and slightly browned. put toppings on each bread:
1) french loaf + two pieces of brie + three strawberry slices (bake) + confetti basil
2) french bread + 2 slices of peaches + 2 tsps crumbled goat cheese (bake) + drizzle honey
3) dark bread + 1 slice of tomato + a drizzle of balsamic vinegar + 1 ball of mozzarella cheese + italian seasoning + sun dried tomato (bake)
(bake) each for about 5-10 minutes, or until cheese is melty.



I kind of wish I could have crostini for dinner every night!
