Info Post
First let me preface this recipe by letting you know that it takes 5 minutes to make. It's probably closer to 4 but I'll throw in an extra minute in case you like to take some time to lick your spoon (I know you'll do it).

This post is of course for my weekly Foodie Friday recipe. Lemonade Pie is perfect for a refreshing and super easy summer dessert.

This post also serves as a lesson in improvising. The improvising comes in because the actual recipe calls for frozen lemonade concentrate.  I had already worked 8+ hours and when the grocery store was clean out, I decided I would take matters in to my own hands. The recipe below reflects my new version of Lemonade Pie and I promise I'm never going back to the original. I hope you enjoy!

{Lemonade Pie}
What you'll need...
The juice of 4 lemons
1 teaspoon of lemon zest
2 tablespoons of sugar
1 pint vanilla ice cream, softened
1 tub cool whip
1 prepared graham cracker crust

What to do...
Beat lemon juice, sugar and lemon zest in large bowl for about 30 seconds
Add ice cream and beat until well blended
Fold in cool whip
Pour into crust and freeze four hours or overnight until firm
