Yesterday I stopped by the Museum of Contemporary Art/Streeterville Farmers market because it's conveniently located a few blocks from my office. I figured it would be a nice change of pace from the "eat while sitting at my desk and simultaneously typing" lunch and it happened to be another beautiful summer day. It's much smaller in scale than Green City Farmers Market but the offerings were still plentiful. I grabbed a demi baguette, some fresh basil, tomatoes and lunch (an amazing ham and cheese crepe).
For my second Market to Meal post I made simple tomato, Parmesan and basil crostinis. They take only minutes to pull together and the sweet tomatoes, salty cheese and flavorful basil are a heavenly combination.
What you'll need...baguette
tomatoes (I used mini heirloom tomatoes)
1/2 cup of grated Parmesan cheese
1/4 cup of basil (rolled and chopped into small pieces)
2 tablespoons of olive oil
What to do...Cut the baguette into 1/2 inch wide pieces and place on foil lined baking sheet (for easy clean up)
Brush the baguette pieces lightly with olive oil
Slice the tomatoes and place on the baguette
Finally, top with shredded Parmesan cheese
Bake for 10 minutes in oven that has been preheated at 400 degrees
After the crostini is done baking, garnish with chopped basil
