Fridays on Simply Irresistible will be devoted to one of my favorite things in life, food. Recipes, seasonal ingredients, restaurant reviews, etc. That's not to say that food related posts wont sneak onto this blog on other week days, but on Friday, food talk is guaranteed. And without further adieu, on this first Foodie Friday, I bring you - BBQ Pork Tacos with Peach Salsa.

Pork Tenderloin Tacos with Peach Salsa and Guacamole 
Tacos
What you'll need...
1 lb pork tenderloin
2 tbsp olive oil
barbecue sauce
3 shredded cheeses - I use Mozzarella, Monterey Jack and Cheddar
peach salsa - recipe to follow
guacamole - recipe to follow
salt & pepper

What to do...
Season pork tenderloin liberally with salt and pepper. Pour olive oil into a pan and heat through. Sear pork tenderloin on all sides and place in baking dish or roasting pan.
Brush with barbecue sauce
Place in 375 degree oven and cook for 30 minutes or until internal temperature reaches 160 degrees

In the meantime, make your peach salsa and guacamole (seriously, what good is a taco without guacamole!)
Peach Salsa and Guacamole
Peach Salsa
What you'll need...
3 peaches
2 tomatoes
1/2 small red onion
1 jalapeno pepper
1/2 cup cilantro
1 lime
1/2 tsp salt

What to do...
Chop the first 5 ingredients finely and mix. Squeeze lime juice over ingredients and season with 1/2 tsp of salt.

Guacamole
What you'll need...
2 ripe avocados
1/4 cup chopped red onion
1/4 cup chopped cilantro
salt and pepper

What to do...
Mix all ingredients and season with salt and pepper to taste
