Hi all, Julie from Julip Made taking over for Lara while she starts one of the most exciting new chapters in her life.  Today I'm sharing with you one of my favorite healthy, and easy dinner's for two... Tilapia en papillote with lemon, thyme, roasted garlic and cherry tomatoes.  En papillote means cooking in a pouch, typically made from parchment paper, in which the fish steams inside in either its own juices or additional white wine/ lemon. Cooking en papillote is in my mind, one of the best ways to cook delicate fish, such as tilapia.  It really enhances any aromatics you add, it requires little to no additional fat, and can really build flavor with an otherwise flavorless fish.

Tilapia en papillote Ingredients:

  • 2 Tilapia fillets
  • 8 ounces cherry tomatoes, halved
  • 2 lemons, 1 sliced thinly the other juiced
  • handful of Thyme sprigs 
  • 2 tablespoons white wine
  • 1 tablespoon butter, melted
  • 6 garlic cloves, half with skin on, half sliced
  • salt and pepper to taste
Tilapia en papillote

  1. Heat oven to 350 Fahrenheit.
  2. Cut 2 oval shaped pieces of parchment paper and fold in half.
  3. Place tilapia fillets on one half of the parchment.  Using pastry brush, brush melted butter around inside of parchment.
  4. Place lemon slices, thyme sprigs, and garlic slices on top of parchment paper and several cherry tomatoes around and on top of the fish. 
  5. Crimp in the edges of the bottom half of the parchment and pour in wine and lemon juice, dividing equally into both parchments.
  6. Fold top half of parchment paper over and securely crimp both edges together, creating a sealed packet. 
  7. Place packets on a baking sheet and surround with the garlic cloves and the rest of the cherry tomatoes.
  8. Bake in oven for approximately 20 minutes.
  9. To serve, slowly open up the parchment and enjoy the delicious aromas.
