On the weekends, I like to take advantage of having more than an hour to whip up dinner. Having a Sunday or Saturday dedicated entirely to cooking and baking is one of my all time favorite ways to spend the day. This Sunday I started the process early, allowing for my pork shoulder to braise slowly in the oven. I used an incredibly easy, five ingredient recipe. The result? Super tender pulled pork sliders. I served the pork with some classic barbeque sauce, a simple slaw, and sweet slider buns.
Pulled Pork
Here's what you'll need...
1 pork shoulder (3-4 pounds)
1 large onion, sliced into quarters
4 whole garlic cloves
2-3 bottles of root beer
barbeque sauce
Here's what to do...
Preheat oven to 300 degrees and position one rack towards the bottom of the oven. Heat a few tablespoons of oil in a dutch oven over medium high heat. Sear each side of the pork shoulder until the entire exterior is browned. Add root beer to the pot (enough to cover 3/4 of the pork), onion, and garlic. Cook pork shoulder about 3-4 hours until extremely tender. Remove pork from liquid and use two forks to shred meat. Add desired amount of your favorite barbeque sauce.
Sesame Slaw
Here's what you'll need...
2 tablespoons light mayonnaise
1 tablespoon cider vinegar
1 teaspoon sesame oil
1 tablespoon sugar
1/4 teaspoon garlic powder
1 pinch of ground ginger
2 cups of shredded cabbage
1/3 cup shredded carrots
Here's what to do...
Whisk together the mayo, vinegar, oil, sugar and spices. Add in cabbage and carrot. Refrigerate until ready to serve. Best if made up to two hours in advance.
