It was a coworker's birthday yesterday and I volunteered to bring in a celebratory treat. Everyone loves chocolate chip cookies so I figured that was a good way to go but I wanted to make them extra special. I decided to stuff them with Oreos ... again, who wouldn't like such a creation! The first time I made these, I used double stuff Oreos and wound up with HUGE cookies. To make them a little more approachable, I used mini Oreos, and they were the perfect cookie size. Little did I know that in addition to my coworker's birthday it was also Oreo's 100th birthday! Meant to be? I think so. So Happy Birthday Chad, Happy Birthday Oreo, and happy day to me ... I consumed an undisclosed amount of cookie dough and mini Oreos in the baking process. It was bound to happen. The cookie recipe is straight off of the bag of mini chips (mini Oreos + mini chips = match made in heaven). Also, I got distracted by those pretty purple tulips and snapped a photo - this has nothing to do with cookies in the least.
Here's what you'll need...
2 1/4 cups all purpose flour
1 tsp. baking soda
1 tsp. salt
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 tsp. vanilla extract
2 large eggs
1 1/2 cups semi sweet mini chocolate chips
1 bag of mini Oreos
Here's what to do...
Preheat oven to 375 degrees. Combine flour, baking soda and salt in a bowl and set aside. Beat together butter, granulated sugar, brown sugar, and vanilla extract in a large bowl or stand mixer. Add in eggs one at a time. Gradually beat in flour mixture. Stir in chocolate chips.
Take one mini Oreo and cover with a small amount of the chocolate chip cookie dough (just enough to cover the cookie). Place on baking sheet about 1 inch apart. Bake for 9-11 minutes or until golden brown. Makes about 45 cookies.
