Info Post

Both of the above statements are absolutely true. If I had to choose a favorite food it would be french fries (pizza would be a close second). Unfortunately, french fries tend to have one big flaw and it's right in their name - they are fried. There's an easy solution to that problem - bake them! 

potato 
olive oil + truffle oil
a few herbs + a few spices

perfection. 

Here's what you'll need...
2 medium potatoes
1 tablespoon olive oil
2 teaspoons truffle oil 
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 tablespoon fresh parsley

Here's what to do...
Preheat oven to 425 degrees. 
Wash and dry the entire potato (do not peel!). Cut off the top and bottom of the potato so it lays flat on a cutting board. Slice potato length wise into 4 even sections. Then cut each section into strips (about 1/4 - 1/2 inch, depending on your preference). 
Place potato strips onto baking sheet and coat with both olive oil and truffle oil. Sprinkle spices over potatoes and gently mix so that potatoes are evenly coated. Make sure not to overcrowd baking sheet (this makes for soggy fries). 
Bake for 20 minutes and then turn. Bake for additional 20 minutes or until fries are nicely browned and crispy.
